They say eating vegetables is important to a healthy lifestyle. But gosh it can be so boring sometimes. There must be a better way to be a proper adult without wanting to cry into your salad.

The secret? Packing in multiple veggies at once. I was inspired by Baked By Melissa’s iconic viral green goddess recipe. To add my twist to it, I created a simple, nut-free option. As someone who resists exact measurements, I adore this recipe because you can add a little more or less of everything, and not screw it up too bad.

Ingredients:

  • Head of green cabbage
  • 1/2 cup olive oil
  • 1/4 cup rice vinegar
  • 1/4 cup tahini (more if you like it thick)
  • 2tbsp honey (more if you have a sweet tooth)
  • 1 cup basil leaves, or cilantro
  • Juice of 1-2 lemons 
  • 1 shallot 

Steps:

  1. Chop cabbage into bite-size pieces in a large bowl.
  2. Blend the rest of the ingredients in a food processor or blender.
  3. Pour dressing on top of cabbage and stir.

Pair with crunchy corn chips, or spoon it like a pint of ice cream. No judgments.
